<p>Hydroxytyrosol, (3,4-dihydroxyphenylethanol), is a natural compound derived from olives and has important biological properties. The present invention provides a method for extraction of compounds with anti-oxidant capacity proceeding from the products derived from olive oil production. The method includes the steps of extraction with a mixture of appropriate solvents from olive vegetation water or from a specific concentrated extract; the separated organic step which contains the soluble antioxidant polyphenolic components, is put in contact with a XAD resin. Finally, the polyphenolic components retained in the resin are recovered using water, giving an extract which as a minimum contains 40% hydroxytyrosol.</p> |
