[PROBLEMS] To provide a food for the aged and people having chewing and swallowing difficulties which has a soft and smooth texture and retains the shape of the fillings and in which moisture separation is regulated within the fillings and thus the leakage of the components in the filling is prevented, and a method of producing the same. [MEANS FOR SOLVING PROBLEMS] A softened food for people having chewing and swallowing difficulties in which a solution containing one or more thickeners selected from among an alginic acid salt, pectin, xanthan gum, guar gum, locust bean gum, carrageenan, glucomannan, curdran and starch has penetrated into the tissue surface and tissue inside of the fillings and thus the surface and inside of the fillings are thickened or gelled, thereby contributing to the retention of the shape of the fillings.
