Method for cleaning cheese moulds

In a mechanical process to clean cheese forms, the forms are first cleaned using a conventional alkaline cleaning solution, followed by application of a separation agent to the cleaned surfaces. The separation agent incorporates fatty acid esters in a concentration of 3 to 7 percent Wt. in aqueous solution.
