A method for making varenyky (a kind of stuffed dumplings) includes sieving flour and kneading dough by adding into the flour water heated up to 30-35 °С with dissolved yeast, whipped eggs and salt and sugar dissolved in water filtered up to obtaining a homogenous consistency of the dough and putting for the further ripening thereof for 3-4 hours up to increasing in the volume by 1.5 times. Periodical breaking down the dough with the further ripening thereof is carried out several times. A layer 1.5 mm in thickness of the obtained dough is rolled by hand, circles are cut out, on which stuff is put, and the varenyky, for example shaped as a half moon, are formed. The varenyky with a filling prepared from the dough are brought to the readiness with thermal treatment on steam in special steamers for 5 min. The varenyky are taken out and spiced, prepacked into sealed packs, cooled and forwarded into a trade network. |
