Tender, immature peas and other pulses are immersed for a period of 3-6 minutes in an aqueous medium at a temperature in excess of 175‹ F. (80‹C.) and containing 5-3 per cent sodium chloride and sufficient sodium carbonate to hold the pH at 8.5 to 10.5, and are then dried by warm air to a moisture content below 11 per cent. The aqueous medium preferably also contains 1-15 per cent sucrose. |
