A working die elevating apparatus is provided to perform the fruits cutting work at the working die stably while cutting the palm fruits easily. A working die elevating apparatus for the fruits cutting comprises: an outrigger(40) which is installed to enable a user to jump to the ground and land; a pivotal part(90) in which a gear is installed inside the gear cover as the rotary joint; a swing post(100) which is built in the pivotal part; a hydraulic cylinder(140) in which an end part is connected and installed to the hinge of a stricker; a boom which is installed in multi-stage by forming a cylinder to move vertically by being connected to the stricker; and a working die connected to and installed at the end part of the boom.
