<P>PROBLEM TO BE SOLVED: To provide a method for sterilizing soybean food raw material comprising uniform and sufficient sterilization of various kinds of bacteria, especially, soil bacteria adhering to the surface of the soybeans, over the entire soybeans. <P>SOLUTION: The method for sterilizing soybean food raw material comprises steps of washing food soybean raw material, soaking the washed raw material in water, making the water-soaked raw material come into contact with oxygen-free superheated steam at 270-350°C for 1-8 sec, while rapidly vibrating and transferring the material, and pulverizing the thus treated material in an oxygen-free in-line process, to produce mashed soybean soup. <P>COPYRIGHT: (C)2009,JPO&INPIT |
