PROBLEM TO BE SOLVED: To provide a gizzard opening apparatus for opening a gizzard to the center of the inner space without damaging a thick-wall part. SOLUTION: The gizzard opening apparatus is provided with a first rotary blade to make a shallow slit on the surface of a gizzard, a second rotary blade rotating at a speed slower than a stationary blade, a follower blade or the first rotary blade and cutting the gizzard to the center part along the surface slit formed by the first rotary blade, a gizzard pressing device to press the gizzard toward the first rotary blade and the stationary blade, the follower blade or the second rotary blade, and a gizzard transporting device to transport the gizzard through the first rotary blade and the stationary blade, the follower blade or the second rotary blade.
