<P>PROBLEM TO BE SOLVED: To provide a production method for a cooked food, performing high quality heating and cooking of maintenance of microorganism safety and equal heating to the inside of a food, in a short time. <P>SOLUTION: This production method comprises making a temporary wrapped food material 10 through wrapping a food material 1, which is washed and heated in an aseptic environment with a wrapping body 2 which has an opening 2a on one end; pouring a heat medium through the opening 2a in the same aseptic environment, to sterilize the surface of the food material 1 by heating and the internal circumference of the wrapping body 2 supplying high-frequency electric power, while gripping the temporary wrapped food material 10 with electrodes 20 and 20 so as to heat to the inside of the food material 1 in the same aseptic environment; sealing the opening 2a followed by hermetically packaging; and cooling the product. <P>COPYRIGHT: (C)2009,JPO&INPIT |
