A manufacturing method and apparatus of the bean curd pudding is provided to prevent the problem of functionality and the nutrition due to the fresh cream, the milk, and the sugar by using the bean curd, gelatin, milk, trehalose, and fresh cream and produce health functional bean curd pudding which the GI index is low and storage nature is improved by a cooling process. A manufacturing method and apparatus of the bean curd pudding comprises the following steps of: a compression step for removing the certain moisture content of the bean curd; a step which melts gelatin after soaking the gelatin in the cooling water; a step mixing the bean curd in which the moisture is removed and fresh cream after mixing the melted gelatin, milk and heated trehalose; and a step which injects the wrapped container in which mixture is filled to refrigerator and keeps in cold storage and develops as products. |
