摘要 <P>PROBLEM TO BE SOLVED: To provide drink and seasoning using rice as the raw material, and safe to food allergy sufferers. <P>SOLUTION: A coffee drink substitute is produced by heating white rice with an oven to burn at least one part of the rice to a blackly burnt condition, cooling the product, producing burnt rice powder by powdering the product with a food mill, pouring hot water into the burnt rice powder, and filtering the product with a cotton cloth after the lapse of prescribed time. A soy sauce substitute is produced by pouring hot water into the burnt rice powder, getting filtered liquid by filtering the product with a cotton cloth after the lapse of prescribed time, and mixing salt, sugar, sodium glutamate, and citric acid with the filtered liquid.
