<P>PROBLEM TO BE SOLVED: To provide a quality improver for improving eating/swallowing adequacy of a starchy foods (cooked rice, rice gruel, Japanese wheat noodles, potatoes, and the like), and to provide a method for preparing an easy-to-swallow food comprising a process of adding amylase, a polysaccharide thickener, and the like, to starchy foods. <P>SOLUTION: The invention is accomplished by the findings that the eating/swallowing adequacy of starchy food is improved, by adding amylase and a polysaccharide thickener to the starchy food and stirring and homogenizing the mixture. <P>COPYRIGHT: (C)2009,JPO&INPIT |
