摘要 <p><P>PROBLEM TO BE SOLVED: To provide Potato Shochu (Japanese distilled liquor produced from potato) having good flavor by using only potatoes as a charging raw material for potato shochu and a malted rice raw material and to provide a method for producing the potato shochu. <P>SOLUTION: The present invention provides the potato shochu using only potatoes as a charging raw material for potato shochu and a malted rice raw material and using dry heat-treated potatoes in at least part of raw material and having≥650 mg/L isoamyl alcohol content or >10.2 mg/L isoamyl acetate content or≥650 mg/L isoamyl alcohol content and >7.2/L isoamyl acetate content, and potato shochu having≥260μg/L farnesol content. The invention also provides the method for producing the potato shochu. In the method for producing the potato shochu, malted rice yield is≥5% and <50% in each case. High-quality potato shochu produced from only potatoes, corresponding to diversified preference and having outstanding characteristics of potatoes is provided by the production method. <P>COPYRIGHT: (C)2009,JPO&INPIT</p>
