<p><P>PROBLEM TO BE SOLVED: To produce frozen vegetables having high qualities by means of relatively inexpensive facilities and easy operating procedures. <P>SOLUTION: The vegetables are obtained by immersing vegetables or mushrooms in 200 ppm of an aqueous solution of sodium hypochlorite, then washing it with water in flowing water, transfer them to a wire net and draining off water from the vegetables or the mushrooms after draining, applying cold air of 30°C or lower to them, removing 10-40 wt.% of water from them, closing the food in a bag having freezing resistance and then freezing the food. The frozen vegetables will not cause grip, has chewability even when used in cooking and the texture will not reduce, even if frozen vegetables are thawed. <P>COPYRIGHT: (C)2009,JPO&INPIT</p> |
