Disclosed are an apparatus and a method for portioning food, especially meat, into portions that have a predefined weight and/or a predefined thickness. Said apparatus comprises: a pressing unit (1) that is equipped with at least two elongate pressing chambers (3a, 3b) and one closing element (5a, 5b) per pressing chamber (3a, 3b); a closing element drive unit (7) for moving the closing element (5a, 5b) within the pressing chamber (3a, 3b) and adjusting the cross-section of the pressing chamber (3a, 3b); at least one ram (8) for the pressing chambers (3a, 3b) which is fitted with a ram drive unit (38) for moving the ram (8) in the longitudinal direction of the pressing chamber (3a, 3b); a portioning plate (2) encompassing several portioning chambers (9); a portioning plate drive unit (12) for moving the portioning plate (2) relative to the pressing unit (1); a cutting element between the pressing unit (1) and the portioning plate (2); and a cutting element drive unit (34) for moving the cutting element relative to the pressing unit (1). |
