The invention relates to an installation comprising rotary massage drums (2a) arranged on a frame (3a) and automatic means for loading meat material into the drum (2a) and unloading same therefrom. Each drum (2a) comprises a lateral loading opening (4a) with a cover (13a), and an unloading opening (6a) at an axial end (7a), and the automatic loading/unloading means comprises a first opening/closing device (12a) for opening/closing said cover (13a) and a loading device comprising means for transferring meat material via a flexible line (9) from a supply source inside the massage drum (2a) via the loading opening (4a). The line (9) is provided with a filling nozzle (15), and the loading device comprises an automatic device (14) for inserting said filling nozzle (15) into the massage drum (2a) via the loading opening (4a) or extracting same therefrom.
