<p>It is intended to automate the meat cutting step in the course of deboning the thigh part of a meat carcass to thereby improve the meat yield, improve the working efficiency and sustain a high commercial value by separating the thigh meat in a non-impaired state. A meat cutting method by cutting meat at the thigh part (1) of a meat carcass with the use of multi-axial and multi-joint type arms (51, 61, 71) provided with a cutting blade (515) at the front end prior to deboning steps (80, 90, 100), wherein the meat cutting step comprises the first meat cutting step (50) of separating the lower part of the top round (7a) and the top round (7b) existing around the thigh bone (3), the second meat cutting step (60) of separating the living tissues around the crural bone (2) and knee joint (5), and the third meat cutting step (70) of cutting the joint part connecting the top round (7b) to the thigh bone (3) and thus separating the top round (7b) from the thigh bone (3), and the meat cutting step is conducted with the multi-axial and multi-joint type arms as described above whereby the cutting blade (515) is driven based on the cutting procedure program (122) and the third meat cutting step (70) is conducted after the first meat cutting step (50).</p> |
