The process for composting/stabilizing organic matter having a wind-row (12) arranged in an enclosure (2), comprises introducing a flow of fresh air into the enclosure, extracting foul air from the exit of the enclosure, transferring a phase of calories from the exiting air flow to entering air flow, and measuring a temperature of the entering air flow, the exiting air flow and/or the internal air of the enclosure. The entering airflow is heated before the calories from exiting airflow are transferred.
