PROBLEM TO BE SOLVED: To provide a sponge giving light texture and having plain and deep taste and flavor, i.e. a Japanese-style sponge, especially a sponge having deeper Japanese flavor, having strong taste and flavor characteristic to beans and potatoes by using a powder mainly having bean starch or potato starch, without using wheat flour and rice flour at all. SOLUTION: The sponge is produced by baking a sponge dough being composed mainly of a mixture of a powder which is composed mainly of the bean or potato starch, eggs, sugar and milk or dairy products.
