发明名称 METHOD FOR PREPARING SUSHI RICE
摘要 <P>PROBLEM TO BE SOLVED: To provide a method for preparing sushi rice whose freshness can be preserved for a long period of time above a week. <P>SOLUTION: A generous amount of seasoned vinegar is added to cooked rice in a proportion about twice that in the case of addition of vinegar for normal sushi rice. After gas displacement of a pack containing the cooked rice and the generous amount of seasoned vinegar, the pack is sealed and is turned upside down and left repeatedly. When the seasoned vinegar flows downward among grains of cooked rice, it slips down the surface of the grains of cooked rice and penetrates the inside of the cooked rice by the grain thoroughly and uniformly. Consequently, time degradation of the cooked rice can be effectively suppressed and the freshness of the cooked rice can be preserved for a long period of time. <P>COPYRIGHT: (C)2009,JPO&INPIT
