The head of the fish is cut to severe the spinal cord of the live fish to kill the fish and the tail of the fish is cut to severe the spinal cord near the tail. A wire is then inserted into the spinal cord via the exposed ends and moved back and forth to destroy and remove the jelly like nerves and medulla oblongata. This process is said to assist delay in the stiffening and subsequent softening of the fish flesh. Instead of a wire, a jet of water or air may be shot through the spinal cord to remove the nerves.
