PROBLEM TO BE SOLVED: To provide a fillet having high commercial value by performing a cutting work while scarcely scraping the meat and improving the yield in the cutting of a beheaded fish body to a fillet with a pair of right and left fillet knives. SOLUTION: A fish body is transported by clamping the body with transfer belts 2, 2, the belly of the fish is opened with a belly opening knife 3 placed in the transportation path, and the body is cut with a pair of right and left fillet knives 5, 5 placed along the inclined faces at both sides of a body receiving guide 9 in a manner placed across the guide 9. In the above process, the part containing the back bone and the belly bone is cut off with the fillet knives 5, 5, and the fish body receiving guide 9 is instantaneously lifted to narrow the gap between the fillet knives 5, 5 and the receiving guide 9 to minimize the amount of meat scraped with the fillet knives 5, 5.
