<P>PROBLEM TO BE SOLVED: To provide a method for processing soybean through improving a conventional method for producing soybean curd comprising using soybean as raw material to produce the soybean curd; and to provide a novel and broad-range method for utilizing a processed product obtained by the method. <P>SOLUTION: The method for processing soybean comprises pulverizing hydrated soybeans obtained by soaking soybeans in water to make them swollen in a saturated state or unsaturated state to be formed into pulverized material, and immediately squeezing the pulverized material with a cloth or the like without heating it to be separated into raw soymilk and raw residue. The raw soymilk obtained by the method is utilized for soybean curd production, and the raw residue is broadly utilized in fields of various kinds of food, such as to eliminate stickiness of fermented soybean, to be compounded to raw material for various kinds of cooked products or to be added to various kinds of cooked food during the production process thereof. <P>COPYRIGHT: (C)2009,JPO&INPIT |
