The invention relates to a hygienisation and anticontagion method for the permanent protection of perishable products by means of ozonisation treatment, which is characterised in that it is performed in the storage chamber or transport box (refrigeration or isotherm systems) containing the perishable products. The inventive method is intended to: destroy ripening gases, such as ethylene gas and other gases (which age and overripen fresh vegetables); provide protection against fungal and other microbial contagions which ruin and spoil such products; and definitively hygienise the storage atmosphere. According to the invention, at variable time intervals each perishable product is subjected to a specific, determined minimum ozone exposure rate which is calculated as the product of the ozone concentration and the exposure time. For said purpose, a system comprising different assemblable modules is used to draw air from the chamber, condition the air, analyse said air, ozonise said air and blow same back into the camber, said modules including: a controller/programmer, a pneumatic conditioner, an ozone generator with a fibre optic intensity display and a multiparameter analyser for analysing the gases and the environmental weather conditions.
