A method for preparing the inclusive product of gamma-cyclodextrin and an insam(ginseng) extract, and the food, a food additive and a dietary supplement containing the inclusive product are provided to remove the bitter taste of insam and to improve the solubility, stability and transparency of an insam extract. A method for preparing the inclusive product of gamma-cyclodextrin and an insam extract comprises the steps of extracting insam with water, ethanol or their mixture and concentrating it under reduced pressure to prepare an insam extract; diluting the insam extract with purified water to prepare an insam extract solution; and adding gamma-cyclodextrin to the obtained insam extract solution and stirring it for inclusion.
