The invention relates to surface treatments and coatings for cheese and (sunflower and pumpkin) seeds with palmitic, lauric and stearic fatty acid esters with sucrose, intended to protect the food and especially the surface thereof, comprising products having film-forming properties based on esters of palmitic sucrose ester fatty acids, lauric sucrose ester fatty acids and stearic sucrose ester fatty acids acting alone or in combination with preservatives and/or other food additives; said preservatives and/or food additives, or any mixture thereof, which are found in the end product to be applied between 1 and 40% (w/w), being added to them.
