A fryer where, when it is on standby for cooking, the temperature of cooking oil is kept at a level slightly lower than that in cooking, and in cooking, the temperature can be quickly raised to a cooking temperature and where heat exchange of the cooking oil is easily performed to prevent deterioration of the cooking oil.The fryer can achieve an excellent cooking environment and enhance work efficiency. The fryer has a container for containing, in two vertical layers, the oil and water for purifying the oil, and also has a heater placed in the oil layer. The water in the water layer is sucked from a suction opening provided in the bottom of the container, and the water purified by being passed through a purification water tank is discharged in substantially the horizontal eccentric direction from a water supply opening formed in a side wall at the lower part of the container, which causes the water in the container to swirl. A device for discharging foreign objects in the filtration water tank is also provided. |
