PROBLEM TO BE SOLVED: To provide a method for producing an unsaturated fatty acid in an extremely high yield in a method for producing a lipid from a hydrophobic lipid precursor using a microorganism. SOLUTION: The method for producing an unsaturated fatty acid from a fatty acid (a) by using a microorganism includes the step of bringing the fatty acid (a) presolubilized in a medium by a surfactant (B) into contact with a microorganism in the medium.
