PURPOSE:To obtain a canned rice gruel having excellent flavor and taste, by feeding water washed rice and water to a can for canned foods, heating the can, sealing up while leaving unpacked part at the upper part of the can, heating to cool and sterilize, turning upside down and rapidly cooling. CONSTITUTION:Water washed and uncooked rice 1 and about 7-7.5 times as much water or warm water 2 as the rice are fed to an empty can 4 for canned foods. Temperature in the can is maintained at a relatively high temperature and unpacked part is secured at the upper part of the can 4. A cover 4 is seamed by a seamer and the can is sealed up while keeping a given air layer 3. Then the can is directly heated to simultaneously promote cooking and heat sterilization, the can 4 is turned upside down, the contents are stirred and rapidly cooled to normal temperature to give the aimed canned rice gruel. Since the canned gruel is neither made into a pasty state during production process nor loses a taste during cooking, the canned gruel is tasty. |
