<P>PROBLEM TO BE SOLVED: To provide an antioxidation agent and a radical scavenging activation agent having suppressed bitter taste and astringent taste characteristic to polyphenols while increasing antioxidation activity and radical scavenging activity, and to provide a food containing either one of the agents. <P>SOLUTION: An antioxidation agent and a radical scavenging activation agent containing an edible plant of the family Compositae fermented with a lactobacillus, and a food containing either one of the agents are provied.
