A method of producing arrowroot juice and powder is provided to obtain arrowroot juice and powder with characteristic color, taste and medicinal value of arrowroots without a bitter taste. Arrowroots are cut to 5cm in length and sliced into several pieces. The sliced arrowroots are soaked for 24hr in mixed liquid containing 5L water and 100ml edible glacial acetic acid, washed with water one time after 24hr, soaked in mixed liquid containing 3g rock salt and 5L water for 24hr, washed with water, dried for 48hr in a natural state and squeezed to obtain arrowroot juice. Rice is soaked in the arrowroot juice, mixed with 100g arrowroot powder and cooked. |
