A voice recognition based text message processing apparatus and method in a mobile terminal are provided to classify language models for voice recognition into several categories and perform voice recognition based on a language model most suitable for a situation to thereby recognize a voice based on a relatively small number of vocabularies and an optimized language model and improve a voice recognition rate and a recognition speed. A message processing method of a mobile terminal includes a step of displaying a message category(S10), a step of performing voice recognition based on a language model corresponding to an item selected from the displayed message category, and a step of converting a recognized voice signal into a text message and outputting the text message(S40).
