FIELD: chemistry, food industry. ^ SUBSTANCE: invention relates to methods of refining vegetable oils, namely, to producing oils with low content of phosphatides. The method includes processing oil with 0.04-0.1% citric acid, with concentration of 45-50% at temperature of 40-50C during 20-30 minutes. While mixing, 4N solution of caustic soda is added in amount of 1.5 equivalent to an equivalent of added citric acid in order to obtain reaction mixture pH 4.5-5.5, and mixed with phospholipase water solution with concentration of 0.5-30% in amount of 30-50 mg/kg of oil, phosphatides are hydrolysed. Mixing of oil with phospholipase water solution and hydrolysis of phosphatides is carried out by means of cavitational interaction of phases with fluctuation frequency of 700-1800 Hz, fluctuation amplitude of 0.3-1.5 mm. Oil is heated to temperature of not lower than 70C to inactivate enzyme, hydrolysed phosphatides being separated. ^ EFFECT: increase in degree of phosphatides extraction from vegetable oils in the process of purification. ^ 3 ex |
