FIELD: food industry. ^ SUBSTANCE: invention relates to food industry. Method includes multiple-factor treatment of product in one volume. It allows for treating biological items in microenvironment with low-power US and microwave oscillations which do not change product properties. Sterilisation is conducted by means of ultra-violet radiation generated from one source - Gunn-effect diode. Pasteurisation is performed by means of infrared radiation generated from tubular resistance-type heater. Main point of device for butter production from cream is that blades are made of a set of plates manufactured from semi-conducting material, which is able to generate US or microwave oscillations under electrical voltage. The following components are introduced into device: spinning system, tubular resistance-type heater, water-cooled jacket, and UV source. Besides, spinning system consisting of cylinder and disk is installed on rotating shaft located along symmetrical axis of capacity. Tubular resistance-type heater is represented as coil located on internal side of capacity. Water-cooled jacket covers capacity from external side along the whole perimeter. UV source being above spinning system is represented as toroid.
