Process for obtaining L-rhamnose of high purity from rhamnoglucosides Comprises: (a) forming an acetal of a rhamnoglucoside on the glycol group of L-rhamnose, (b) oxidative break-up of the free 1,2-diol group using an oxidizing agent, (c) hydrolysis of the product obtained without affecting the acetal group of the L-rhamnose, (d) hydrolysis of the acetal to obtain free L-rhamnose. The process has important industrial repercussions given that it can be used to obtain easily purified free L- rhamnose and the by-products can be utilized industrially.
