PROBLEM TO BE SOLVED: To provide an imaging element, an imaging apparatus and an imaging method capable of adjusting optical sensitivity in each color in the case of imaging an image. SOLUTION: The imaging element is provided with: a plurality of photoelectric conversion parts 42 formed on a semiconductor substrate to receive incident light to thereby generate a signal charge; a color filter layer 46 arranged on each of the plurality of the photoelectric conversion parts 42 so as to make a prescribed color correspond to, a condenser lens part 47 formed on the color filter layer 46 to have a liquid crystal layer whose orientation changes by being applied with a voltage; and a liquid crystal voltage adjusting means for applying a voltage to the liquid crystal layer located on the color filter layer 46 of a prescribed color.
