PROBLEM TO BE SOLVED: To provide a method of manufacturing an optical fiber, by which the optical fiber having small residual twist and small polarization mode dispersion is manufactured. SOLUTION: The method of manufacturing an optical fiber includes: a drawing step for melting the tip of an optical fiber preform and drawing an optical fiber; a coating step for coating the outer periphery of the drawn optical fiber; and a twist applying step for applying a twist to the covered optical fiber by holding the coated optical fiber between at least a pair of twist applying rollers arranged so that rotary axes can be parallel with each other with different levels and feeding the coated optical fiber in the prescribed direction by rotating the pair of the twist applying rollers around the rotary axes, and reciprocating the pair of the twist applying rollers in a direction reverse to each other. In the twist applying step, the twist is applied to the coated optical fiber in a state that each rotary axis of a pair of the twist applying rollers is tilted by a prescribed angle in the direction vertical to the feeding direction.
