<P>PROBLEM TO BE SOLVED: To provide a technique for manufacturing unmolded soybean curd capable of manufacturing highly value-added unmolded soybean curd without losing a hand-made feeling by realizing a filling method using a manual operation despite the fact that the method represents a mechanical production with the unmolded soybean curd production by machine being enabled. <P>SOLUTION: From the upper surface of a soybean curd material T1, an upper layer soybean curd ball T3 is scooped up. Next, the remaining soybean curd T2 left over after the upper layer soybean curd ball T3 is scooped up is made to drop in a product container T, during which the remaining soybean curd T2 is made to pass through a cutter 4 to be cut on its way down. The plurality of soybean curd bodies T4 cut by the cutter 4 are stored in the bottom of the product container T.
