<p>Disclosed are: an antifungal substance which is produced by an yeast selected from the group consisting of yeasts belonging to the genera Candida, Saccharomyces, Pichia, Rhodotorula, Clavispora and Torulaspora and can inhibit the germination of a spore; and an antifungal substance having the following characteristic properties: 1) the substance exhibits an antifungal activity at pH 7.0; 2) a culture produced by the cultivation of the yeast in a culture medium containing 10% (w/w) of skimmed milk has an antifungal activity; and 3) when a supernatant of a culture produced by the cultivation of the yeast in a culture medium containing 10% (w/w) of skimmed milk is ultrafiltered on an ultrafiltration membrane having a MWCO (a molecular weight cut off) of 10 kD, the supernatant is retained on the surface of the ultrafiltration membrane.</p> |
