PROBLEM TO BE SOLVED: To provide a simple and rapid measuring method of the lipid content of marine products or the processed main products thereof capable of being operated even by a person other than a food analyzing expert by using neither an expensive analyzing device nor an organic solvent. SOLUTION: The sample collected from the marine products or the processed main products thereof is heated to artificially induce peroxidation reaction to make the produced lipid peroxide and its decomposition substance react with thiobarbituric acid to measure the amount of the red coloring matter in the reaction product, and the amount of the red coloring matter is compared with that in a standard substance set as an index to measure the lipid content of the marine products or the processed main products thereof. Either one of a method for visually comparing the degree of the red color of the reaction product with that of the standard substance, a method for measuring visible light/ultraviolet ray absorbance or the intensity of fluorescence to quantify the lipid content and a measuring method using chromatography, can be employed.
