A method for producing a microbiologically stable and safe food compositi on is described. The methodincludes the step of mixinga food compositioncomp rising an anionicpolymerwith a saturated preservativehaving an overall posit ive charge, wherebythe saturated preservative is added inthe last mixing ste p,in order to produce a food composition free of spoilage and pathogens.
