<P>PROBLEM TO BE SOLVED: To obtain mayonnaise containing granular Wasabi (Japanese horseradish) good in Wasabi flavor and the sustainability of Wasabi's bactericidal effect, and to provide a method for producing the mayonnaise. <P>SOLUTION: The mayonnaise 1 is obtained by the following procedure: Wasabi collected from its farming field is ground to granules, the granular Wasabi is exposed to an acidic aqueous solution and immersed in an aqueous solution whose pH is adjusted within the range of ±0.5 relative to the pH of mayonnaise 3 to be incorporated with the granular Wasabi.
