<p>The subject of invention is the antioxidative and microbiological protection of paste and thus also the protection of colour, texture, taste and smell of paste by using extracts of Labiatae family plants and their mixtures. Labiatae are rosemary, sage, balm, oregano, savory, mint, thyme and others. Main active ingredients in extracts of Labiatae family plants are carnosolic acid, carnosol, rosemary acid and their derivatives. Carnosolic acid and carnosol are oil soluble and rosemary acid is a water soluble active ingredient. The oil soluble extract of Labiatae family plants contains 0- 100 wt. % carnosolic acid and 0-20 wt. % carnosol. The water soluble extract of Labiatae family plants contains 0-100 wt. % rosemary acid. The invention refers to the antioxidative and microbiological protection of paste by means of extracts of Labiatae family plants. Further, the invention refers to the preparation of a mixture for antioxidative and microbiological protection of paste, based on a water soluble and/or oil soluble extract of Labiateae and/or extract of hop and mixed tocopherols. Namely, a combination of water soluble and oil soluble active ingredients imparts a better antioxidative and microbiological protection to a product.</p> |
