<P>PROBLEM TO BE SOLVED: To provide an oil and fat-glucide powdery material, to provide a method for producing the powdery material, and to provide an application product thereof. <P>SOLUTION: The method for producing the oil and fat-glucide powdery material includes making a dispersion of an oil and fat covered with glucide by mixing a lipophilic material-dispersed oil obtained by dispersing a fat-soluble material in an oil and fat and a lipophilic emulsifier, with an aqueous dispersion of the glucide obtained by dispersing the glucide in water and a hydrophilic emulsifier, and arbitrarily drying the dispersion to afford the dispersion of the oil and fat covered with the glucide, and the fat-glucide powdery material. The material and the application product thereof are also provided. As a result, the fat-soluble material can be formed into a powder, and physically and chemically stabilized. By the production method, the quality of the food using the fat-soluble material is improved, for example, discoloration is reduced, color is maintained, the deterioration of taste and perfume is retarded, preservation stability is improved and storable duration is elongated, to enable the oil and fat-glucide material to be utilized widely not only in a food field but also in the field of cosmetics, medicines or the like. <P>COPYRIGHT: (C)2008,JPO&INPIT |
