PROBLEM TO BE SOLVED: To provide a method for producing a biosurfactant, such as glycolipid, having high biodegradability and low toxicity and which is environmentally friendly and has improved water solubility in order to attempt wide spreadof the biosurfactant in the food industry, cosmetic industry, medicalindustry, chemical industry, and environmental field, or the like. SOLUTION: The method for producing a deacylated product of a glycolipid type biosurfactant comprises regioselectively cleaving the acyl group of a glycolipid type biosurfactant by using a hydrolase.
