A hydroalcoholic fat emulsion and emulsifier for use therein

A hydroalcoholic fat emulsion comprising at least 1 percent alcohol by volume and at least 1 percent fat by weight and an emulsifier is disclosed. The invention also relates to an emulsifier suitable for use in a hydroalcoholic fat emulsion, wherein the emulsion comprises at least 1 percent alcohol by volume and at least 1 percent fat by weight. The emulsifier is a glycoprotein which comprises at least one protein and at least one carbohydrate covalently bonded and the invention further relates to the use of the glycoprotein as an emulsifier in a hydroalcoholic fat emulsion.
