Baking mould designed for manufacturing pastry products, such as choux pastry

The method involves filling a pattern (4) with choux pastry such that the pastry exposes a lateral wall (3-1) of a cooking mold (1), where the pattern is formed by a base wall (2) and the lateral wall of the mold. The choux pastry is cooked. The mold is covered with a cover wall (7) during cooking. The lateral wall is formed by a stainless steel bands and pierced in order to facilitate internal transmission of heat and evacuation of vapor and cooking gas. An independent claim is also included for a cooking mold for implementing a choux pastry producing method.
