摘要 <P>PROBLEM TO BE SOLVED: To provide an oil and fat composition which can suppress whitening phenomena and the like in baked confectionary used for composite confectionery even if the content of a trans fatty acid in a used oil and fat composition is small, can give good operability for baked confectionary production, and can decrease the trans fatty acid content contained in the oil and fat composition for baked confectionary. <P>SOLUTION: This oil and fat composition mainly contains (A) an oil and fat obtained by carrying out random ester exchange for a mixed oil comprising milk fat and high erucic acid oilseed rape extreme hardened oil and (B) an oil and fat obtained by carrying out random ester exchange for a palm oil. The content of a saturated fatty acid of 6C or lower in the whole composition of the fatty acids is 0.05-3.0 wt.%. Baked confectionary such as cookies, biscuits and the like is produced with this oil and fat composition.
