NOSTOC SP-DERIVED AMYLOPULLULANASE AND PREPARATION METHOD OF MALTOOLIGOSACCHARIDE WITH THE SAME

A novel amylopullulanase isolated from Nostoc sp PCC73102 is provided to be used to effectively prepare highly pure malto-oligosaccharide having a glucose molecule number of 7-11 from a substrate including starch. An amylopullulanase derived from Nostoc sp. includes an amino acid sequence of SEQ ID : NO. 4. A method for preparing malto-oligosaccharide including malto-octaose comprises a step of reacting the amylopullulanase in a substrate including starch at a temperature of 10-40 deg.C under pH of 7.0-8.0.
