A method for preparing enzymatically highly branched-amylose and amylopectin cluster is provided to produce the highly branched amylopectin cluster, highly branched amylose or a branched oligosaccharide effectively from starch using maltogenic amylase and alpha-glucanotransferase or a branching enzyme. To prepare a highly branched-amylose, a highly branched amylopectin cluster or a branched oligosaccharide, a branching enzyme or alpha-glucanotransferase and maltogenic amylase is reacted with starch. A processed health food comprises the highly branched-amylose or the highly branched amylopectin cluster as an effective ingredient.
